Homemade tomato sauce
When the summer harvest is as rich with tomatoes as this year, you can still enjoy a delicious homemade tomato sauce in winter. This recipe (and the machine) date back to my childhood and just as my sister and I loved this tomato sauce (it's more of a soup because it's relatively thin), my children also love it and gobble it up fresh from the machine.
Ingredients

- 21 kg/46 fl. oz. beefsteak tomatoes, preferably "ox heart" type (lots of flesh, few seeds)
- 6 large vegetable onions
- 3 garlic bulbs
- salt
Instructions

Roughly chop the tomatoes, peel and roughly chop the onions, peel the garlic and halve if necessary. Boil all the ingredients together with salt to taste until the tomatoes start to break down. Strain everything (I have a machine that does this, but you can also use a moulinette or sieve by hand). Bring to the boil again and pour into sterilized bottles. If the hot sauce does not seal the bottles automatically, place in the oven for approx. 30 minutes at 110 ° C/230 ° F. Enjoy!
