My carrot-to-top ratio this year was definitely GREEN!
I just turned the tops into a Mojo Verde! It worked great.
Serve it with Canarian potatoes and I’m happy.
Otherwise, the sauce also goes great with antipasti (served with a little yogurt)
Recipe:
About 2 cups of carrot tops
Approx. 60 ml white wine vinegar
100 ml olive oil
Approx. 4–7 cloves of garlic
1/2 tsp cumin
Salt
Just throw everything in the blender—done!

I like carrot top pesto! Made some last year, put it in silicon ice cube forms, froze and enjoyed it through the winter. This year I found a recipe that included some spinach so have made a small batch of that as well to try. I like not just composting all of the carrot tops.

Mag ich auch, allerdings ohne Käse.
Die Mojo Verde überdeckt den Kräutergeschmack durch den Essig etwas stärker, da kann man wirklich alles grüne reinhauen, Radieschenblätter, Karottengrün, Kräuter etc.
Und sie ist dünnflüssiger. Manchmal braucht es nur eine Kleinigkeit für das gewisse Extra, dann träufel ich diese Würzsoße am Ende über das Gericht😋
