...My Summer Kitchen, Part 11 The following little soup might also be interesting for @Alex&Sempi🤷 ➡️ Cucumber Foam Soup with Fish ⬅️ (It works without fish, too 😉) ...In my braised cucumber recipe, I already mentioned that the scraped-out core definitely shouldn’t go in the trash... No, we’re going to make a delicious light soup out of it... Put the drained liquid from the salted cucumbers along with the scraped-out core (if you happen to have the soft flesh of a zucchini on hand, you can add that too!) into a pot, then add fish sauce, green Thai curry paste, garlic🧄, Vietnamese or fresh cilantro, mint, and kaffir lime leaves, let it simmer for about 30 minutes, purée with an immersion blender, and strain through a sieve using a ladle. This liquid has a creamy consistency (no starch or other thickeners needed!) Pour in coconut milk, froth it up with a hand blender, pour into shallow soup plates, place a piece of pan-fried fish fillet inside, sprinkle croutons on top, and enjoy! Vielen Dank für die bebilderte Rezeptbeschreibung. Haben heute erst wieder 15 Gurken von 2 Pflanzen geerntet. Werden wir so oder ähnlich ausprobieren.
