The tasty butter cabbage from grandmother's garden was already almost extinct. Yet it has unusually valuable qualities. It is not only healthy, but also ideal as a fresh vegetable for small households. This delicious fine vegetable matures early and forms yellow-green, loose heads with blistered, finely hammered, tender leaves. You can harvest the leaves from young butter cabbage in portions. In summer, when the heads are not yet fully closed, the outer leaves can be plucked from the plants as needed, as with plucking lettuce. Only later do the heads close to form dense heads. Harvested in the fall, mature cabbage can be stored in a cool cellar for several weeks.
