Asparagus lettuce (celtuce) is a high-yielding vegetable specialty from East Asia with thickened, club-shaped stems up to 1 m long. It grows like lettuce and has been bred from these and therefore also belongs to the Asteraceae family. However, the asparagus lettuce is allowed to shoot and then the thick stalks are harvested (the leaves can also be eaten until the lettuce starts to shoot). They are juicy and fleshy and have a slight kohlrabi flavor and can be eaten raw or cooked/steamed/fried. Use without leaves and skin. Excellent wok vegetables.
