This will be the last tomato sauce this year. It's still okay for cooking, but no longer a hit for eating fresh. But hey, it's December 11th!

Good morning, If I remember correctly, there are also people here who have experience with fermenting. Can you tell me if there is anything against fermenting carrot greens? Has anyone ever tried this? I can find recipes for the carrots themselves, but not for the greens, of course. It's hardly known as a food anyway. Is it because of this, or is there really something that speaks against this version of green sauerkraut? I really like the strong taste, but I can only tolerate the strong fibers in moderation. I would therefore like to make this source a little easier to digest and healthier. I would also like to make my own fermented food on a regular basis to support my weakened digestion. The carrot greens would be just what I need, because unlike the already flatulent white cabbage, I have them around regularly. Question 2) What happens if I leave it to rest at 14°C or just 8°C instead of 18°C as recommended? Will the same bacteria develop more slowly or will other undesirable bacteria develop? I would be pleased to hear about your experiences!
