The 'Hungarian Hot Wax' variety originates from Hungary and can develop quite a distinct pungency. Still green when unripe, they go through a pale phase until they finally turn orange-red. The chillies, which grow up to 18 cm long, have an aromatic, juicy-sweet taste. They have found their way into the kitchen mainly fresh and raw, but are also ideal for stuffing or grilling.
