Description

Hyssopus officinalis ssp. aristatus The smallest hyssop, the plants grow to a height of only 30 cm. With bright dark blue flowers that taste of aniseed and mint, very good! The aroma of the leaves is spicy, reminiscent of mint and sage. A few leaves can be cooked with fatty meat dishes to improve the taste. They are also used to enhance dishes that are gratinated with cheese, such as raclette. Rock hyssop also looks great in a pot or balcony box.

Hyssop is a thermophilic plant. It can be grown in advance in February or sown directly in May. As the seeds are light germinators, they are placed on the soil and watered. In the right location, the perennial is largely undemanding. To make it feel at home, plant it in a sunny, sheltered spot with loose soil. Hyssop is insensitive to drought and only needs a little watering in summer. The plants are also relatively hardy. It is sufficient to cover them with coniferous branches.
