Mountain savory originates from the Mediterranean and the Balkans, where it grows on dry and rocky slopes and at altitudes up to 1,500 meters. Mountain savory thrives well in light and preferably calcareous soils. The young shoots can be harvested year-round, but taste best before flowering. Also, for shoots that are to be dried, the time before flowering is most suitable.
