The soybean is a well-known Asian legume and has been cultivated for at least 3000 years. The variety 'Envy' was bred traditionally (without genetic engineering) and is well adapted to the northern climate. It is grown just like garden beans or other legumes. Soy is certainly one of the most versatile foods - from soy sauce to yogurt and other milk substitutes, the enormously protein-rich bean can be used for an incredible number of different purposes. As an oilseed, it is one of the most important crops in the world. However, the majority of cultivated soy is used as animal feed. Even in Central Europe, soybean seeds ripen easily and can be used fresh or dried. Soybeans harvested young are particularly tasty and can be prepared like peas.

Outdoor sowing from the middle of May in hoards (several seeds in the planting hole). Pre-swelling the seed overnight in water promotes germination. Otherwise treat like bush beans. The beans turn green, are harvested from mid-August and then ripen.
