The classic "apple eggplant" from Thai cuisine. This variety is notable for its decorative, golf ball-sized fruits in light green with attractive white marbling. Taste & texture: Firm, crisp flesh with a mild, slightly nutty aroma. Unlike European varieties, it remains firm when cooked and absorbs sauces excellently. Use: Indispensable for authentic Thai green curry. Can also be used raw in salads or briefly sautéed in stir-fries. Growth: Compact, bushy growth (approx. 60–80 cm), ideal for greenhouses or warm, sheltered locations outdoors and in containers. Harvest the fruits when they are about the size of a golf ball and the skin is still shiny. Fruits harvested too late turn yellowish and develop a bitter taste and hard seeds.

You should grow eggplants in nutrient-rich soil in a sunny, warm location. To prevent the plants from bending, you can tie them up. As with tomatoes, side shoots should be removed by breaking them off directly at the base. From time to time, it is worth removing some of the fruit shoots so that the remaining fruit ripens better.
