Evangelina produces slightly red-skinned, elongated sweet potatoes. The skin fades to pink during storage. One tuber weighs an average of 300g. The flesh is deep orange in color, the beta-carotene content is 40% higher compared to other varieties. The taste is sweeter than other varieties. In tastings, Evangelina was rated the best variety, although the yield was lower.
