The Gobbo Di Nizza artichoke (Cynara cardunculus) is an old variety. It is also known as "Cardy" and probably originates from Ethiopia. As well as preparing the flower, the stalks of this strong plant can also be blanched and preserved in jars like asparagus. Perennial and relatively frost-hardy.
