Zatar is one of the best seasoning herbs. Probably the most popular spice in the biblical world, it is also highly praised in the legends of the Talmud. In Arabia and Israel, it is of course called 'zatar'. In all desert countries of the Middle East, where this herb grows wild, it is the zatar of choice! The soft, hairy leaves are wonderfully tender and can be used fresh in the kitchen like marjoram or oregano. Arab cooks can not only tell from the aroma which variety of dried zatar herb they are being offered, but also which region it comes from! - The spiciest ones, of course, come from hot desert regions. This variety is probably the true biblical hyssop (Hebrew: ezov; Arabic: zatar). Easy to grow as a pot plant. White flowers.
