Good Henry is also known here as Wild Spinach or Green Henry. It is a perennial goosefoot plant. As the leaves resemble spinach leaves and the stalk resembles asparagus, the plant used to be eaten as a substitute for asparagus and spinach, but is now used more as a leafy vegetable. The young leaves can be harvested until the beginning of flowering and have a tangy, spicy aroma.
