Asparagus belongs to the asparagus family (Asparagaceae). The perennial shrub grows mainly underground. The rootstock overwinters and sprouts anew in spring. These young shoots are harvested as asparagus. After harvesting, the cut shoots form asparagus greens or asparagus cabbage.
