I bake our eggplants in the oven at 200 °C for an hour, scoop out the insides, and put each eggplant in the freezer. When we go barbecuing again, I’ll take out one package. Let it thaw, then make a delicious spread with cream cheese, garlic, and a little salt to enjoy on baguettes or ciabatta.
