Dark purple, almost black corn from Peru. The corn is eaten young as vegetable corn. The cobs are still soft and a whitish juice comes out when you press your fingernail into the kernel = milk ripeness. Then remove the kernels from the cob with a knife by cutting from top to bottom. Use for vegetable pots, colorful stir-fries and soups. This corn is also traditionally used for something else, namely as a lemonade-like drink with cinnamon or as corn beer. The drink without alcohol is called "Chicha Morada". Contains a lot of anthocyanins and vitamin E, the health substances for cell protection, anti-ageing, strengthening the immune system, circulation and eyesight. Recipe: Chicha Morada 250g corn kernels, 1 piece of pineapple (apple also works), 2 cloves, a small piece of cinnamon, 1.5l water. Boil everything for 1 hour, pour through a sieve, leave to cool. Add the juice of a lime and sugar to taste. Serve cold. Keeps for several days in the fridge.

The plants can grow very tall. For cultivation as vegetable corn, normal sowing is sufficient; for use as a beverage ingredient, the dried and fully ripened cobs are required. Harvesting for consumption: eat young, when the kernels are still soft, fresh, cooked or grilled, tastes hearty like corn, later use the hard, dried kernels for drinks
