The Inca cucumber is a really funny cucumber. It is harvested throughout the summer at a length of 5 cm, has thorns and looks like a green hedgehog. It tastes similar to a zucchini. The 'Inca cucumber' can be eaten fresh, pickled in brine or vinegar, boiled or fried and also stewed or stuffed. When cooked (approx. 15 minutes), the thorns become soft and can be eaten. The young shoots and leaves can also be used in the kitchen, for example as a soup vegetable.
