Kai-lan, also known as Kailaan Kichi, Chinese broccoli or stem cabbage, is an Asian leaf cabbage variety with thick stems and shiny bluish-green leaves. The stalks taste crunchy like kohlrabi, the leaves like fine pointed cabbage and the flowers like broccoli, all in all very aromatic. The crunchy leaf stalks are often used in Chinese Mandarin and Thai cuisine; they are usually fried briefly in a wok and then seasoned with soy sauce. The young leaves are also used in fresh salads.
