The South American Chilhuacle Negro chilli is the perfect chilli variety for drying and grinding into finely aromatic chilli powder. Chilhuacle is a rare species that only grows in southern Mexico around Oaxaca. After the drying process, the Chiluacle Negro delights with a not very hot but extraordinarily aromatic "smokey taste". Without its intense aroma, Mexican mole sauces from the Oaxaca region would not be so unique.
