The Aji Amarillo chili is one of the oldest varieties in the Peruvian Andes, where it has been cultivated since 2,500 BC. It is still one of the most popular varieties in the Andean region today. The plants belong to the Capsicum baccatum species (tree chilli), are perennial and can grow very tall (up to 2 meters) with good care. They are relatively easy to grow and are also suitable for chili beginners. The fruits ripen in a rich dark yellow to orange color, are approx. 10 cm long and 4 cm thick. They have a medium heat and an aromatic, fruity taste. Fresh, they are suitable for fruity salsas and sauces and are traditionally used for the South American fish specialty ceviche.
