Botanical name: Trigonella caerulea English: blue fenugreek Ingredients: keto acids, pyruvic acid, ketoglutaric acid Ingredients used: above-ground parts of the plant Indications: Loss of appetite, digestive complaints Other uses: Bee pasture, spice Also known as Ziger clover, Ziger herb, Zigainer herb, cheese clover, bread clover or blue sweet clover. The Schabzigerklee is one of the best cheese spices. Ground leaves and flowers produce a spicy, curry-like flavor. A great spice that can be used in many different ways. For example, for savory rolls, salads, cream cheese and casseroles. It tastes somewhat milder than its relative fenugreek. It also has a place in folk medicine, where it stimulates the appetite, aids digestion and soothes coughs.
