The 'Filderkraut' is a variety of vegetable cabbage related to the white cabbage. A southern German specialty from the Filder plain (near Stuttgart), it is also known as 'Spitzkohl'. The variety ripens late and has large-lobed, thin leaves and firm heads tapering upward. The flavor is somewhat milder and more delicate than that of white cabbage. In cooking, it is traditionally used to make sauerkraut or, because of its short cooking time, is used as stir-fried or stir-fried vegetables.
