Savory is a light germinator and the seeds should be sown on top of the soil, lightly pressed down and watered. There are two very different groups of varieties: Winter savory is perennial and can be harvested all year round. Summer savory is sown anew each year and harvested over the summer months. Sowing the very small seeds over a wide area produces a natural carpet of plants. To harvest, cut off the branches just above the soil surface. Subsequent sowing is possible until the beginning of July. Savory is very drought-resistant. Overwintering: Outdoors: last pruning in late summer, only shoot tips. In spring, you can then cut a little deeper so that two-thirds of the plant remains standing. In the bed, protect the plant with leaves and brushwood or garden fleece if there are severe frosts and no snow cover. Containers in particular must then be completely covered with special winter protection mats. Frost-free days should be used to water the plants. Most plants do not freeze, they dry out. If possible, place them indoors in a cool room (15 to 18°C ideal) at a bright window (preferably south-facing) and keep them only moderately moist.
