Pesto basil is a mix of red and green basil and is ideal for making pestos. It is used fresh or dried. However, it also goes very well with fresh salads, pasta dishes, vegetables and meat dishes. It can also be found in herb sauces and on pizzas. Basil has a soothing effect on the stomach and stimulates the appetite, aiding digestion and metabolism. The basil leaves should only be plucked from the stems shortly before use and should not be cooked. In its original form, the well-known "Pesto alla Genovese" contains basil mixed with pine nuts, garlic, olive oil and Parmesan cheese.
