This delicate, fine vegetable from the Far East resembles the closely related Chinese cabbage in many ways. The highly rounded heads with pure white, blistered, thickened stems are striking. They are prepared fresh as a crisp salad or cooked similarly to chard. This vitamin-rich but low-calorie vegetable with a mildly spicy flavor contains lots of fiber and appetite-stimulating juices. 'Joi Choi' is particularly shoot-resistant and insensitive to changing weather. As a use of the beds after harvesting peas, lettuces or kohlrabi, the fast-growing heads ripen already about 60 days after planting in autumn.
