Unlike the artichoke, which is actually a cultivated form derived from the cardy, it can also be cultivated well in somewhat cooler climates and is considered a typical winter vegetable. For consumption, it is not the flowers that are used, but the stems and shoots, peeled and freed from leaf debris, which are considered a delicacy especially in Italy, Spain and France. They taste somewhat tart because of the appetite-stimulating bitter substances they contain, but at the same time they are deliciously nutty.
