Description

Old, almost forgotten root vegetable. Cultivation and marketing like salsify. Sweet aromatic flavor, known in England as "vegetable oyster". Very decorative, edible, purple flowers in the 2nd year.

Growing tips

Oat root is a frost-hardy storage vegetable with a long development period that can be harvested throughout the winter. Sow more densely and separate to specified spacing. Regular weed control and soil loosening is important. Harvestable until flowering in April, then the roots become woody and inedible.
